From the grain to the foam, from the field to the glass

 

In order to breworganic beer, we need, among other ingredients some organic malt! It is available at specialised retailers but it is expensive, all colors are not available and on top of that shipping costs make the prices balloon.

But what is "malt"?

It is barley that has germinated, dried and then put in a kiln between 70 & 180 °C to allow it to obtain the flavors and colors needed, the barley is finally sieved to remove the shoots.

Since I wanted to control the quality of my product from the beginning to the end I started looking for a farmer able to provide me with AB-certified organic barley....

And thanks to the Association Biologique de Picardie (ABP)I found one and only a couple of kilometers away from the brewery!

Gambrinus, patron saint of brewers, had sent his help! It was was almost too good to be true!

I thus started to make my own malt with very little information about malting...

Producing your own malt is not necessarily cheaper than buying it but it allows me to obtain the exact colors I want for my line up. I also allows me to make sure that we only use local ingredients, which would be impossible if I was buying my malt.

And finally roasted organic malt is not available as of now, you thus have no choice but to make your own if you want to brew any black beer...

After a few failed attempts I designed my own malting method which can suits small quantitiues (50kg maximum)

For soaking the grain we use a modified water heater on which we have added and axis and a grating to allow easy draining.

All you need to do is soak the grain in the water and wait for 8h, drain the water by doing rotating the tank and repeat this process the next day.

After soaking and draining the grain a couple of times, the grain is then piled & spread (depth varies on temperature ) to allow germination.

Grain has to be often moved while keeping an eye on temperature and humidity, these 2 parameters are essential to have a slow and strong germination with small radicles in order to increase efficiency.
